Unlike the classical Burgundy winemaking approach, Alice and Olivier De Moor focused since the beginning on making pure, natural wines, using gentle vinification processes to ensure the most natural and respectful use of their terroir.
We are in Courgis, a small village 7km southwest of Chablis. Here is where Olivier grew up, while Alice is from the Jura. From the hill where Courgis sits, their view stretches all the way to the Chablis Grands Crus.
After studying oenology in Dijon, the De Moor took a radically different direction for their wines than their neighbours. They planted their first vines in 1989, but really started the De Moor Estate in 1994, which also marks their first harvest.
Looking after the vines with the maximum care and with a minimalistic approach in the cellar, they also started working organically since 2005, a rarity for their region, with no SO2 addition at harvest nor at bottling.
All their cuvées are really sought-after with a small production, hence we only have a few bottles each. This is a very limited release, with only 4 boxes in total available.
The box features two wines from their négoce + four from their Domaine including one Premier Cru.
