Without Jean-Yves Péron, La Cabane would not exist in Hong Kong. It's because we wanted to make people discover his wines that the idea popped-up.
Previously oenologist, he decided to settle his own domain in Savoie, near Albertville, in 2004, after traveling around the globe, in the US and New-Zealand. His estate is composed of several little parcels, in terraces of vines, around the city of Conflans, in the Tarentaise Valley. The whole estate lays on unstable soils (most largely composed of schists). His vines are relatively old, aged between 30 and 120 years old - all local varieties. As a proper biodynamic vineyard, wild flora is growing beside his vines, making them stronger and livelier.
