*Pét-Nat (Pétillant-Naturel) - the method is different from the méthode traditionelle usedto make Champagne; Pét-Nats go through only one fermentation and the wine is bottled when fermentation is not over, so to let it finish in the bottle. Then, it can either be disgorged or left with the lees. This method results in wines that are pleasantly fizzy with not much pressure in the bottle.
