Jean-Claude Lapalu is from the profession. His family (parents and grand-parents) were grape-growers, selling their fruits to local cooperatives. None of them, however, were wine makers. That is, until 1995, when Jean-Claude Lapalu decided to take over a vineyard. His devotion to natural wine went step-by-step, and he now uses natural vinification processes.
