British born, Master of Wine Tim Wildman started his winemaking project
back in 2014. Being very much a pioneer of the pétillant naturel style, he
works with Mediterranean varietals in the Adelaide Hills, which suit the hot
dry climate there. Tim mainly sources three key grape varieties:
Vermentino, Nero d’Avola and Zibibbo from the Riverland, South Australia, as he believes they give him the natural acidity he needs for the pét-nat style.
But why pét-nat? Pét-nat is notoriously hard to pin down and it comes in
so many different styles that, for Wildman’s maverick approach, seemed to
be the perfect choice to start with.
