TINNYU WINERY
TINNYU'S TEAM
Shangri La
Tinnyu田与酒造 is a project of independent winemakers from traditional wineries. Starting from Shangri-La, Yunnan Province in 2021, Tinnyu explores the possibilities of Chinese wines in a fun way, with our professions and sustainable ecology as well as the hands of winemakers, expressing an unique style of Shangri-La wine.
In order to maintain the balance of the vineyard's ecosystem and to protect the environment, the soil and the health of the villagers living in the vicinity, they minimize the usage of harmful chemicals such as fertilizers, herbicides and pesticides. Instead, they manage the vineyard by utilizing the biotic components of the ecosystem using regenerative agriculture.
Regenerative agriculture is a strategy aimed at protecting and rebuilding agricultural ecosystems. Its core lies in stimulating soil regeneration, enriching biodiversity, optimizing water resource cycles, enhancing ecosystem functions, aiding carbon sequestration, increasing resilience to climate change, and simultaneously improving soil health and vitality.
Tinnyu Winery initially owned 0.12 ha of Chardonnay in A-Dong Village at an altitude of 2,600 meters, with all vines planted in 2008. To enhance the complexity of our wines, they leased an additional 0.44 ha of Chardonnay in Xi-Da Village at an altitude of 2,800 meters. This area is divided into 8 distinct parcels and managed using Regenerative Viticulture practices. Most of the vines in Xi-Da Village they planted in 2008, with a few planted in 2012. As Meili Shi Village is expected to disappear within 5 years due to the construction of a dam, Tinnyu Winery added another 0.13 ha of Cabernet Sauvignon vineyard in Meili Shi Village to produce more wines, preserving this sun-drenched riverside vineyard as a memorial.

Organic, Biodynamic and Natural wine. What’s the difference?
To understand this concept and its various ramifications, it is necessary to keep something clear in mind: before the 20th century and the spreading of affordable synthetic fertilisers, all farming was organic. When the shift to the use of synthetics and pesticides happened, it became necessary to diversify traditional organic farming from the new modern farming.
ORGANIC WINE
Simply put, organic farming forbids the use of synthetic fertilisers, synthetic pesticides, herbicides, or genetically modified organisms. The basic requirements are generally specific and engage the farmers not to use any chemical fertilisers and other synthetic products in the vineyard. It does not prevent the vintner from using the conventional winemaking process after harvesting.
BIODYNAMIC WINE
Let’s take organic farming one step further: Biodynamic. The creator of this agricultural system is the Austrian philosopher Rudolf Steiner, who developed the principles of biodynamics in a series of lectures given in 1924 in Germany. Here lies the foundation of true organic wines, with a strict limit in the use of additives, stringent requirements and at the end obtaining a biodynamic certification.
NATURAL WINE
The previous definitions are usually, and rightfully, associated with it, because most natural wine is also organic and/or biodynamic. But not vice versa!
Natural wine is wine in its purest form, simply described as nothing added, nothing taken away, just grapes fermented. No manipulation whatsoever, minimal intervention both in the vineyards and in the winery. Healthy grapes, natural yeast and natural fermentation, with no filtration nor fining. Sounds easy, right? However, making natural wine is unforgiving and it requires a bigger amount of work than conventional wine. To this day, natural wine has no certification yet.
